SANKT LAURENT
Sankt Laurent is something of a prima donna – it needs a lot of attention, which makes tending the vines a very demanding job. It’s a sensitive variety, too, so we harvest the grapes in several rounds. The grapes for this characteristic Sankt Laurent grow on vines that are half a century old and planted in loess soil on south-facing terraced vineyards. The wine matures in new barrique barrels – the wood helps the flavours to develop and supports biological acidity reduction. In the glass, fruity cherry and plum notes take centre stage alongside earthy hints of beetroot.
